Here's a version for those of you that love macaroni and cheese but can't do the noodles or the milk sauce. This version uses coconut milk and goat cheese. Feel free to use the soy cheese substitute or another type of cheese if you like.
GF Dairy(sort of) Free Macaroni and Cheese
2 c. GF pasta, cooked according to directions. Use a sturdy noodle, like an elbow. The brown rice or quinoa ones are good.
1 12 oz can coconut milk, NOT low-fat
1 c. rice, almond, or soy milk
1 T. corn starch or other thickener
1/4 c. water
1 t. salt
black pepper to taste
1 c. crumbled goat cheese or goat mozarella
Cook pasta according to directions. Set aside.
In medium saucepan, mix coconut milk and rice milk. Bring to a boil, stirring constantly. Dissolve cornstarch in water. Add to boiling milk. Cook and stir until thickened. Remove from heat. Add salt, pepper, and cheese. Stir until cheese is mostly melted. This depends on which cheese you choose. *IT WILL NOT LOOK LIKE REGULAR MAC'N'CHEESE* Pour sauce over noodles and toss gently to coat. Serve immediately.
