Thursday Recipe - Sour Cream Chocolate Bundt Cake

I got a new bundt pan for Christmas. *happy dance* I love weird and funky cake pans. I'm not such a fan of cake, though. I just love weird baking dishes. This one is supposed to make a giant doughnut, but it mostly just makes a smooth bundt cake.

And if all recipes were this delicious, I might decide cake is much better than I thought.

Sour Cream Chocolate Bundt Cake

1/3 c. butter, softened
1 1/2 c. sugar
1 1/2 c. sour cream
1 t. vanilla
1 t. salt
1 t. baking soda
1/2 t. baking powder
2 eggs
2/3 c. cocoa powder
1 3/4 c. flour

Cream butter and sugar together. Stir in sour cream, vanilla, salt, soda, baking powder, eggs, and cocoa. Beat smooth. Stir in flour. Beat with a mixer for 2 minutes, until smooth and creamy.

Grease and lightly flour your pan of choice. Pour batter into the pan.

Bake rounds - 25-30 minutes at 375°
Bake 9x13 - 30-35 minutes at 375°
Bake bundt - 45-55 minutes at 350°
Bake cupcakes - 12-17 minutes at 375°

Orange Cake - leave out cocoa powder; add 1 c. orange juice and increase flour to 3 c. Glaze with lemon glaze.
Lemon Poppyseed - leave out cocoa powder; add 1/4 c. lemon juice, 3/4 c. milk (coconut works great), and increase flour to 3 c.  Glaze with lemon glaze.
Almond Poppyseed - leave out cocoa powder; add 1 c. coconut milk and 1 t. almond extract, and increase flour to 3 c. Glaze with white chocolate vanilla glaze. Top with sliced almonds.

Thursday Recipe - Chocolate GF Sponge Cake

I'm experimenting with a wheat-free diet. My health issues are getting the best of me and I'm willing to try anything that might help at this point.

So I decided to start this wheat-free diet on my birthday. While I have guests in the house. And all sorts of other crap going on in my life. Not a good idea. Extra stress is not pleasant.

But it did give me the option of playing around with my GF sponge cake recipe. It's easy, fairly quick to pull together, and makes a delicious cake. I made one on Saturday that was gone before everyone got a slice. It was vanilla, filled with coconut cream, whipped topping, and fresh berries. Today I shall attempt chocolate sponge with chocolate whipped frosting.

*Note: This cake is more dry than the vanilla version. It's best to underbake it a bit, then after it cools, wrap it in plastic wrap and refrigerate overnight. Frost and serve the next day. Mine also didn't rise nearly as high as the vanilla one. Still tasty.

Chocolate Gluten-Free Sponge Cake

7 eggs
3/4 c. sugar
1/2 c. cocoa powder
1/4 t. salt
1/3 c. rice flour
3/4 c. almond flour

Heat oven to 325. Grease a 10-inch springform pan and set aside.

Separate eggs, being careful to keep the yolks out of the whites. Set the whites aside.

Beat the yolks until very thick and creamy, at least 3-5 minutes. Add sugar and salt. Beat for another 1-2 minutes. Stir in flours. Set aside.

Beat whites until stiff peaks form. Gently fold egg yolk mixture and cocoa into the whites until the bits of white foam are all incorporated and cocoa is mixed in.

Pour the batter into the prepared pan. Bake for 30-35 minutes, just until a toothpick comes out clean.

Cool 10 minutes in the pan, then gently release the cake. Finish cooling on a baking rack.

Once cool, split the cake into two layers. Fill with half of the chocolate frosting. Use the rest of the frosting to decorate the cake. Refrigerate to set.

Store in the fridge.

Thursday Recipe - Peanut Butter Chocolate Whoopie Pie

Every once in a while, I want something decadent. Something that any self-respecting diet book would tell you to run away from, as fast as your chubby cellulite-ridden body can move. Yeah, I hate diet books. Just a warning that this is the kind of dessert to reserve for very special occasions, like the hubby's birthday. I usually try to post healthier recipes, and I did lighten this one up just a little. But be warned: It's a diet killer. But it's sooooooooo good. And not hard at all.

And just in case you're wondering, this is a double layer cake, not pie, but it's called whoopie pie for obscure reasons. If you're really interested in why, go read this article. And yes, I know this recipe isn't technically a whoopie pie, but it's based off another recipe that calls it whoopie pie even though it's a big cake. But whatever you call it, this is really delicious.

Peanut Butter Chocolate Whoopie Pie

Chocolate Cake:
1/3 c. yogurt, plain or vanilla
1/2 c. powdered milk
1 1/2 c. water
1 T. lemon juice
1/2 c. oil
2 eggs
2 c. sugar
1 t. baking soda
1/2 t. salt
3/4 c. baking cocoa
2 c. flour (I used half whole wheat, half white)

Heat oven to 350°. Grease and flour two round cake pans (I used my 10 inch springform pans.) Set aside.

Beat yogurt, powdered milk, water, and lemon juice together until smooth. Stir in oil and eggs. Beat until smooth. Set aside.

In large mixing bowl, mix sugar, soda, salt, and baking cocoa. Add liquid ingredients. Beat until smooth and creamy. Stir in flour.

Divide the cake batter evenly between the two pans. Bake for 25-35 minutes, until cake springs back when lightly touched. (The 10" pans took 28 minutes, smaller diameter pans will take a little bit longer.) Remove from the oven. Let cool in the pans for about 5 minutes. Turn out onto wire rack to finish cooling.

Peanut Butter Frosting/Filling:
1/2 c. cream cheese
1/2 c. butter
1/2 c. peanut butter
3-4 c. powdered sugar
2-4 T. milk

Soften cream cheese and butter if needed. Beat together with peanut butter until very smooth and fluffy. Add 3 c. of powdered sugar and 2 T. milk. Beat until smooth, scraping the sides of the bowl often to make sure everything is mixed in. If frosting is too thick, add more milk. If it is too thin, add more powdered sugar. You want something soft and spreadable that still mostly holds its shape. Beat the frosting on high for at least five minutes. Check the consistency again and adjust if needed. Once you have a smooth, creamy, fluffy peanut butter filling, eat it with a spoon assemble the cake.

Assembling:
Place one layer of the cake upside down on a serving platter or large plate. Hint: If it bulged up in the center, use a big serrated bread knife to level the cake before assembling. You only need to do this to one layer.

Dollop a very generous amount of the peanut butter delicious filling on top of the cake layer. Spread a little, it should be soft enough to continue spreading on its own when you add the second layer. Speaking of which, place the second layer, right side up, on top of the filling. Let it settle a bit. The filling layer should squish out the edges a little. Dollop the rest of the frosting on the top and gently spread it. Let it drip down the edges on its own.

Now the hard part. Set the cake aside for several hours to let the frosting set up. You can cover it and refrigerate it if you want or if its really hot in the house.

Serve and eat.

Thursday Recipe - Baked Fudge

Warning! This recipe is so incredibly rich and decadant, you'll get fat just smelling it. It only makes one 9 - 10 inch cake layer, but it will serve 12-16 people. It's better than cheesecake, mostly because it's chocolate and doesn't have cheese in it.

And for those of you that are looking for gluten-free, this recipe is. You can also do dairy-free if you use a good quality margarine. But it isn't fat-free, not even close. And don't, for the love of Pete, try to make it sugar-free. If you're going to destroy your diet, do it with panache and style.

Baked Fudge, aka Gluten Free Chocolate Cake

12 oz. semisweet chocolate chips
3/4 c. butter or margarine
6 large eggs, separated
1/2 c. sugar, divided
2 t. vanilla extract (or 1 t. almond)

Melt chocolate chips and butter together over low heat, stirring until smooth. Set aside.


Heat oven  to 350°. Spray one 9" or 10" springform pan. (You can use regular cake pans but it will be harder to get the cake out in one piece.)


Beat egg yolks and 1/4 c. sugar until very thick and lemon colored, at least 3 minutes. Fold in melted chocolate mixture and vanilla.


In another bowl, beat egg whites and remaining 1/4 c. sugar until stiff peaks form. Fold egg whites into chocolate mixture until thoroughly combined. Spoon into cake pan. Bake for 25-35 minutes until toothpick comes out clean.
Cool for 15 minutes before removing from pan. Put it on a large plate, cover tightly with plastic wrap, and refrigerate for at least six hours.


It's supposed to fall and get really dense. If you really want to, you can top it with whipped cream and a cherry. Or even drizzle caramel over the top.

Darn it! I just drooled all over myself just thinking about this cake. Now I have to make one.
